1. Make use of a dehydrator
- Place your dehydrator on parchment paper or silicone sheets.
- Spread little quantities of honey over it evenly.
- Set the dehydrator to 40oC and leave the honey to dry until crispy. Depending on how strong the adhesive is, this might take 2 days or more to dry.
- Crush into finer particles before grinding to the desired texture.
- Preserve in an airtight container.
- If possible, add food-grade desiccant to assist absorb moisture and keep it from clumping.

2. Use a stove or oven

My oven has an average temperature of 100 degrees Celsius and turns off at around 50 degrees Celsius.
- Line the oven tray with parchment paper. Apply a thin layer of honey and allow it to dry.
- Bring it out when it’s crispy and chilly and the humidity is low.
- Make a fine powder and keep it in a container.
